This is my best recipe as it is quick, simple and always a lovely surprise. The best thing about this recipe is the versatility - instead of figs, pistachios and maple syrup, other fruits, nuts and syrups can be paired with the watermelon cake. I love that this is also a healthy, refreshing dessert.The best thing about summer is the seasonal fruit and has inspired me to create new ideas!
Ingredients
1 kg watermelon
250 g low-fat fresh ricotta
1 lime
2 tbs maple syrup
1 figs cut into wedges
2 tbs roasted unsalted pistachios chopped
1 handful fresh mint leaves only
2 tbs maple syrup *to decorate

1 potato peeler
Method
STEP 1 In a small bowl, combine the ricotta, lime juice, and maple syrup. Set everything aside until ready for dessert.
STEP 2 Using a peeler, gently peel the rind of the lime and slice each piece into long, fine strips. Retain 2 tablespoons of juice from the lime.
STEP 3 Remove the skin and rind from the watermelon, keeping the fruit in one piece. From the flesh, cut a thick, circular cake-like piece of fruit. Keep the remainder to decorate or eat!
STEP 4 Before serving: On a serving dish, please the piece of watermelon down. Top with the ricotta mix. top the ricotta with the fig, mint leaves, pistachios and lime rind. Drizzle the top with maple syrup.
STEP 5 Cut into wedges and serve!
Notes
*The size of the watermelon can be changed depending on the number of guests. **Try replacing the figs with other options like blueberries or pear. *** Instead of maple syrup, you can try honey, passionfruit or other fruit syrups. **** Try using cream cheese instead of ricotta. There are simply so many options!
