Caramelised Pineapple Skewers


Equipment
1 saucepan
wooden bamboo skewers

Ingredients
1 pineapple cut into pieces
1 fresh red chilli finely chopped
100 ml water
100 g brown sugar
1 tsp fresh mint finely chopped
1 tsp fresh coriander finely chopped
1/4 cup peanuts roughly chopped
1 lime

Method
STEP 1 Thread pineapple onto skewers. Set aside.
STEP 2 In a small saucepan, bring to the boil sugar, water and chilli. Bubble until liquid reduces and thickens slightly. Add the coriander and mint.
STEP 3 Brush skewers with the syrup and grill on barbecue until caramelised. Remove from the barbecue and pour over remaining syrup.
STEP 4 Scatter over peanuts. Squeeze the juice of one lime over the top.
Notes

Soak wooden bamboo skewers in water for a few hours or overnight so that the sticks don't burn during cooking.
