Turkey and Cranberry Mini Quiches



Equipment

  • 12-hole cupcake pan

Ingredients

  • 500 g turkey roast diced
  • 1 onion large finely diced
  • 2 cups mozzarella grated
  • 1/2 cup cranberry sauce
  • 4 eggs beaten
  • 4 sheets puff pastry frozen

Method

  • STEP 1Preheat oven to 180C and lightly grease a shallow mini quiche or cupcake tray.
  • STEP 2In a large frypan, slowly fry diced turkey and onion on a moderate heat until fragrant and onion is soft.
  • STEP 3Take pan off the heat and add grated cheese. Allow to melt and combine.
  • STEP 4Add cranberry sauce and combine. Allow to cool a little.
  • STEP 5Add eggs and stir until combined.
  • STEP 6Use a round cookie/scone cutter to cut enough rounds to fill each hole in the tray.
  • STEP 7Fill each round of pastry with approximately 1 teaspoon of the mixture.
  • STEP 8Bake for approximately 15 minutes or until lightly golden.
  • STEP 9Repeat with remaining pastry and mixture.
  • Notes

    These are also great for storing in the freezer to use when unexpected guests come around. They will last for up to 3 months and all you need to do is reheat them in the microwave for a minute or two, or for a crispier flakey pastry in the oven for 5-10 minutes.
